Super Food Harvesty Muffins
I came up with This Recipe
using all my favorite Muffiny things . . in One Muffin. :)
It is quite the Laundry List of ingredients but. .
they are SO good and SO good FOR you.
I'm Quite in L O V E with Golden Flax Meal
and Chia Seeds. . . which are both Super Nutrient Rich Foods
and can be added to basically ANYTHING.
So. .
Here we go.
Turn on your oven
350
Bowl # 1
2 Eggs
1 Can Pumpkin
1/3 Cup Light Olive Oil
1/2 Cup Brown Sugar
1/2 Cup White Sugar
Whisk
Bowl # 2
1/2 Cup WW Flour
1/2 Light Buckwheat Flour
1/2 Cup White Flour
1/3 Cup Golden Flax Meal
2 Heaping Tbsp Chia Seeds
1/2 Tsp Salt
1 Tsp B Powder
1/2 Tsp B Soda
1/2 Tsp Ground Cloves
1/2 Tsp Allspice
1/2 Tsp Fresh Grated Nutmeg
1 Tsp Cinnamon
1/2 Tsp Ground Ginger
Whisk
Add to Wet
Fold in Gently or use a Danish Dough Whisk
which works so fast and gently at the same time.
Add and Fold in Gently a Chopped Apple
A Generous Handful of Crazins and or Raisins
A Small Handful of Rough Chopped Walnuts if you like that sort of thing
And for my boys. . i always throw in a few Chocolate Chips
Spoon into Muffin Tins
with either paper or buttered
Sprinkle Lightly with Cinnamon and Sugar
Bake till toothpick comes out clean
About 15 minutes.
They are SCRUMPTIOUS !
They freeze well too
so tuck a few away
for the odd moment a week or so
from now when you just
NEED a muffin
:)
